What is hogget meat?

Meat from a sheep of either sex or a wether classified as a hogget; that is, with two but not more permanent incisors. Although common in farming usage, “hogget” is now rare as a domestic or retail term for the meat. Hogget meat tends to have a darker red color than meat from a younger lamb and to have a slightly richer flavor.
